The décor at Absinthe Brasserie is part of its strength. That, and the cocktails. As a brasserie, the dishes do not disappoint. As a bar, Absinthe has earned a reputation for its creative cocktails. The drinks inspired the book The Art of the Bar (published by Absinthe bartenders in 2006).

Absinthe Overview
Absinthe was born when proprietor Bill Russell-Shapiro decided to offer some of his favorite foods from Southern France in a Belle-Epoque-inspired setting.
Absinthe draws people from around the city and is especially popular on opera and ballet nights with the Civic Center venues so close to Hayes Valley. The bar and brasserie are open late for the lemurs among us.
Food
People come for the Absinthe hamburger which is a Niman Ranch beef burger topped Gruyere or Gorgonzola. The restaurant also has an oyster bar, cheese selections and other bistro-style dishes for both lunch and dinner. A large brunch menu is served on the weekends.
Bar & Cocktails
Absinthe has a significant bar menu, including the aforementioned burger. Thursdays are Flight Night, where you can sample the days designated spirit.
